Spring is back Sydney! Dust off your sunnies and sunscreen for a day of fun, cocktails and laughs at our iconic waterfront venues. With so many fantastic drink options made every weekend across the precinct, we’ve put together our favourites to give you somewhere to start. Blackbird Café
Starting on the balcony level, Blackbird’s signature cocktails are synonymous with fun, excitement, and most importantly, flavour! We’ve gone for an appropriately oceansidetheme here, recommending one of their aquatic concoctions to start this spring.

Long Beach  
~ Vodka, Rum, Gin, Triple Sec Sweet & Sour, Cranberry Juice
This boozy mix will transport you an endless beach on a deserted island, carefree and without a worry. While we may be longing for travel again (curse you COVID-19!), this may be the next best thing!

Café Del Mar Sydney
Bring the party to the rooftop terrace and the stunning Café Del Mar, Sydney’s premier Mediterranean lounge. These guys are right on time – back open and ready for the warmer weather. From the décor to menu, cocktails to music, you’ll be sipping the night away in Spanish style. We’ve picked our favourite for a memorable night out.

Café Del Martini
~ Vodka, Malibu, Pineapple Reduction, Lime Juice, Fresh Basil
A signature twist on the classic Martini, this sunset stunner should be your first port of call when visiting Café Del Mar. Dripping in elegance and sophistication, we’ll take this cocktail on the sundeck please.

Pontoon Bar
As close as you can get to Cockle Bay without going for a swim, Pontoon is the perfect waterfront location for your Spring session. Find them on the promenade for some classic cocktails, because if it isn’t broken why fix it?

Espresso Martini
~ Kahlua, Vodka, Espresso
Equal parts of each, this caffeinated beauty is Sydney’s go-to party starter or night cap. We love this cocktail when the sun goes down, especially with those warmer harbour breezes starting to delight patrons.

Adria Bar Restaurant
Another Promenade venue well worth a Sunday session is Adria Bar Restaurant. Sunset transforms this stunning restaurant into a Sydneysider’s dream bar. Our top cocktail pick exudes class.

Coco Chanel
~ Jose Cuervo 1800 coconut tequila, Cointreau, Monin coconut syrup, pineapple juice. Served with a desiccated coconut rim.
These flavours combine to create a sense of relaxation and luxury reminiscent of their namesake designer. One to try this weekend by Cockle Bay.

I’m Angus Steakhouse
While you may associate a first-class steakhouse with large (and many) glasses of top shelf red, I’m Angus has a huge selection of premium cocktails. It’s best to try our favourite on a night when you don’t eat your weight in beef!

Fiery Mule
~ Cargo Cult Spiced Rum, Fireball, Limoncello, Monin Ginger Syrup, Fresh Lime, Mint topped with Cloudy Apple Juice
There’s a lot going on, but we promise it works! The spiced rum, fireball and ginger are perfectly balanced by the supporting citrus. The Tomahawk of cocktails comes to mind here. 

Nick’s Seafood Restaurant
Nick’s Seafood is a Sydney icon, proudly serving only the freshest produce. This core value of quality translates to the cocktail menu, where our favourite is nothing but the best.

Pure Grain
~ Belvedere Smogory Forest Vodka, Pama Liqueur, Cinzano Rosso & Fee Bros Chocolate Bitters with a Pernod Spray
This delicate cocktail is perfect for pairing, enhancing the flavours that can only be found in the freshest seafood. We recommend ordering this alongside an oyster platter.
